I'm sorry but this recipe was listed in the low carb casserole category but it is not low carb when any type of bread, and the like, are used. If you substitute ground pork rinds for the bread crumbs, that would make the recipe low carb (there are other substitutions but this one is the first to come to mind). Carbs turn into sugar and that spikes your insulin levels greatly. Be careful with your carb consumption, it's a silent sugar and the culprit behind many diabetic's struggles with maintaining their blood glucose levels but is often overlooked but is often the root cause.

I was excited about this recipe because it is so low in Weight Watchers PointsPlus but was disappointed with the taste. I made it exactly as the recipe states but the flavor was too bland for me. It may be just fine and enjoyable for other folks though.
