Tomato Basil Veal

Today's nonstop schedules require us to plan healthy meals that can be ready in a snap. We promise that you can get our Tomato Basil Veal from the stovetop to the tabletop in less than 20 minutes!

What You'll Need

  • 1/4 cup whole wheat flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons canola oil
  • 4 (4-ounce) veal cutlets (1 pound total)
  • 1/4 cup sun-dried tomatoes, reconstituted and slivered
  • 3 tablespoons chopped fresh basil, divided

What to Do

  1. In a shallow dish, combine the whole wheat flour, salt, and pepper; mix well. Place veal in flour mixture and turn to coat completely.
     
  2. In a large skillet, heat oil over medium-high heat. Add veal, sundried tomatoes, and 2 tablespoons basil. Saute veal for 2 to 3 minutes per side, or until browned and cooked through.
     
  3. Sprinkle with remaining basil, and serve.
