Made with hearty black beans, some fresh-tasting salsa, and some off-the-shelf spices that bring it all together, this is one recipe that will have the whole family asking for seconds. The best part? What You'll Need

3 1/2 cups reduced-sodium vegetable broth
2 cups water
1/2 cup chopped onion
3 (15-ounce) cans no salt added black beans
1 (16-ounce) jar salsa
1 teaspoon ground cumin
1 teaspoon garlic powder
1/2 teaspoon black pepper

What to Do

Coat a soup pot with cooking spray and saute onion over medium heat 3 to 4 minutes or until tender. Add broth and water; bring to a boil.
Meanwhile, rinse and drain 2 cans of beans and set aside. In a blender, purée the remaining can of undrained beans until smooth. Add the bean purée and the rinsed beans to the broth mixture.
Stir in salsa, cumin, garlic powder, and black pepper. Cook 10 to 15 minutes or until slightly thickened, stirring occasionally.
