Sunny Apricot Sauce

We just love homemade fruit sauces here at the Mr. Food Test Kitchen! And this one tastes like a ray of sunshine. Best part? Sunny Apricot Sauce is light and healthy, and made with pantry staples that we can reach for any time of year.

What You'll Need

  • 1 (15-ounce) can apricot halves in juice, sliced, with 2/3 cup juice reserved
  • 1 tablespoon cornstarch
  • 2 tablespoons white wine vinegar
  • 1/4 cup sugar-free apricot preserves

What to Do

  1. In a small saucepan over medium heat, stir together apricot juice, cornstarch, and vinegar until cornstarch dissolves.

  2. Bring to a boil, then reduce heat to medium, cooking until sauce thickens, stirring continuously. Stir in preserves and apricots, cooking until preserves dissolve.
