I've never seen a 1 ounce pudding, the smallest I've seen is 3.4 ounces ???

Hello! This recipe calls for sugar-free instant pudding which is a 1 ounce box. If using regular instant pudding that comes in a 3.4 ounce box. Either size can be used in this recipe, it just depends on if using sugar free or regular pudding.

I love whipped cream and pineapple and pudding! THis is one of my favorite non chocolate desserts! I sprinkle a little, just a little, toasted coconut on the top when I have it.

Another question for the Test Kitchen Team---Can you put this in a graham cracker crust and serve as a pie??

Hi there! Yes, you can put this in a graham cracker crust and serve it as a pie. Just remember that by serving this in a pie crust, it will change the provided Nutritional Information and may not be considered diabetic-friendly anymore. Enjoy!

To make it as pie - would the any of the recipe amounts change?? Also, do you think it'd taste better in a graham cracker crust, a shortbread crust, or a Nilla crust?? I think a Nilla crust but I would like your opinion. Thanks!

The recipe amounts would not change if you make it as a pie. We also would choose a Nilla crust as our first choice. :) Enjoy!

Absolutely amazing, quick and easy, good as a "company" dessert. Great after a big meal when you want something sweet but are full. Also good with coconut cream pudding, like a pina coloda.

Thought this was great. My non diabetic husband thought that this is better than regular fluff made with marshmallows

It would be nice to know approx. serving size-ex. 1/2 cup, for people that do not want to dish up 8 separate servings all at once. Sounds yummy.

Question for the Test Kitchen team Can you make this in a larger amount and just put it in a large serving bowl?? If so, what would the amounts be -- say to serve 10 people or so.

Hello! - Yes, you can certainly make more of this and serve in a larger bowl. If you'd rather not double the recipe, which would make enough for 16, then we recommend adding an 8-ounce can of crushed pineapple, a 16-ounce container of whipped topping, and a larger size of the vanilla pudding (if you can find it in your local stores). Enjoy!

It's also great with pistachio pudding mix instead of the vanilla!

I have made this for years but I have always used instant lemon pudding mix as it gives it more flavor than a bland vanilla.

It is also the recipe for using this for making angel food cake and using for filling and topping. Tastes so yummy. I often thought of just having this. Now I know why!

Do you make the pudding or just add the dry mix?

Stick it in the freezer and its like an ice cream pie. I made it this way for my Mom. It's also good using crushed strawberries in place of the pineapple.

This is really delicious and light. I sometimes add half a sliced banana for a tropical flavor.
