Mustard is not something I would think to use with pork. I have seen it used in chicken recipes and a few beef ones, but never pork. I think it sounds like it would work well and I love what Tru2Myself54 says about the flavor profile of the mustard in this dish.

When I bake my Hams I always coat the outside with some kid of Mustard!! We prefer a spicy brown.SOOOO GOOOOD!!!!!!

Absolutely delicious, both the diabetics that I gave this too liked it. And although I typically don't like mustard, even I found it well balanced in flavor, moist, and not over powering. Which is why I gave it 5 stars. I did make one change as I didn't have the "Japanese style- Panko bread crumbs" I used plain Essential Everyday bread crumbs (Wal-Mart's brand).

this sounds great! Previously I have made this with mayo instead of mustard, which of course increased the fat. Looking forward to trying this, anticipating more flavor from the mustard.
