Pudding Puffs

COOK TIME: 50 Min

A cloud of rich tasting vanilla pudding is nestled in our light and airy homemade cream puffs. Hard to imagine this heavenly dessert is so easy to make and fits a diabetic lifestyle. But it does!

What You'll Need

2 tablespoons butter
1/2 cup water
1/2 cup all-purpose flour
2 eggs
4 sugar-free vanilla pudding snack cups

What to Do

Preheat oven to 400 degrees F. Coat a baking sheet with cooking spray.
In a medium saucepan, bring butter and water to a boil. Add flour all at once, stirring vigorously. Cook and stir over medium heat until mixture forms a ball. Remove from heat. Cool 10 minutes.
Add eggs one at a time, and beat well after each addition. Drop mixture in 8 equal mounds on prepared baking sheet.
Bake 30 minutes, or until golden brown. Transfer to wire rack to cool.
Cut tops off puffs and remove soft dough inside. Spoon 1/4 cup pudding into each cream puff bottom and replace tops.

Notes

Drizzle with a sugar-free chocolate sauce for an added surprise!

I have made a ton of cream puffs over my life. You're right--the eggs must be totally incorporated into the dough--and this becomes tough after a while. The other hint is--only make them on a VERY dry day. They don't like moisture. If you can manage that--you'll get perfect puffs every time.

I tried this and the puffs were beautiful when I took them out of the oven. Then swoosh! They fell in on themselves. What went wrong?

Hello! - It's hard to say what may have gone wrong with your cream puffs without more information, but some things that are important are 1) Use butter and not margarine or soft butter, 2) Eggs must be stirred in really well, 3) Cream puffs must be baked until they are golden. We hope this helps!

May have to try this on over the weekend. You can not beat a homemade cream-puff. And you can change up the filling by adding different things, like coconut, pineapple, strawberries, what ever you are having a "craving" for.

I have not tried this yet, but I wish you would add more visual effects, I would be more inclined to try a recipe that has a picture showing what I am about to try to make. I realize this is not always possible but I have notice you have few pictures of the diabetic recipes. Just a suggestion. I feel if I feel like this maybe there are others who feel the same way.
