Here's another fresh and flavorful way to enjoy the flavor of strawberries without a lot of fuss. Our Strawberry Chicken Salad is doubly-delicious, 'cause it's topped with a homemade strawberry dressing too!

What You'll Need

  • 3 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons sugar-free strawberry jam
  • 1/8 teaspoon black pepper
  • 6 cups chopped romaine lettuce
  • 1 cup strawberries, sliced
  • 2 (6-ounce) cooked chicken breasts, cut into slices
  • 2 tablespoons crumbled goat cheese
  • 2 tablespoons sliced almonds

What to Do

  1. In a small bowl, whisk olive oil, vinegar, strawberry jam, and pepper until thoroughly combined; set aside.
  2. On a large platter, layer lettuce, strawberries, chicken, goat cheese, and almonds. Drizzle with dressing and toss until evenly coated, just before serving.
