EDR Green Bean Toss

For a great taste of summer, make our Green Bean Toss. It's got juicy plum tomatoes and just a hint of lemon juice for the freshest-tasting salad around.

What You'll Need

  • 4 large plum tomatoes, cut into chunks
  • 1/4 cup chopped fresh basil
  • 1 clove garlic, minced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt, divided
  • 1 (12-ounce) bag, frozen cut green beans, thawed
  • 1/4 cup Parmesan cheese, shredded

What to Do

  1. In a salad bowl, combine tomatoes, basil, garlic, olive oil, lemon juice, and salt; mix well. Add green beans and Parmesan cheese and toss. Serve immediately at room temperature, or cover and chill until ready to serve.
