Creamy Raspberry Delight

What You'll Need

  • 1 package (4-serving-size) instant sugar-free, fat-free raspberry gelatin mix
  • 1 cup boiling water
  • 1 cup sugar-free vanilla ice cream
  • 1 cup raspberries
  • 1/4 cup chopped almonds, toasted

What to Do

  1. In a medium bowl, mix gelatin with boiling water and stir until it dissolves completely. Whisk in ice cream.

  2. Refrigerate about 20 minutes or until it thickens slightly.

  3. Stir in raspberries and almonds. Divide among 6 dessert dishes and refrigerate until firm.
