I used to make these with regular sugar and crunchy peanut butter before I developed diabetes. These are the perfect snack when I am craving sweets. I have added coco powder to them as well and it takes great!

What an easy recipe. I am always looking for something that has peanut butter in it to curb my cravings for sweets. I think this little gem of a recipe will fit that purpose just fine. I like to mix up a bunch of cookie ingredients and just eat the dough sometimes, and I can see using this as one of those ideas even though you are not supposed to eat raw eggs, I am a frequent cookie dough lover.

Could I substitute Trivia for the Splenda?

Hi there! While the Test Kitchen has not tried it, we believe that Truvia would be a suitable substitution for Splenda. Just like the Splenda Baking Blend, Truvia Baking Blend is what would need to be used. Thanks and enjoy!

Is the calorie content listed correct for this recipe. It seems really high for one cookie made with splenda and peanut butter. Just wondering.

Hello! Yes, the calorie count is correct for this recipe however, the actual amount of calories in your cookie may be different depending on what brand/type of peanut butter you use. Peanut butters and all nut butters are high in calories, so it's important to enjoy them in moderation.

I use the other version of the recipe with sugar in my culinary class. It's really easy when they get a hankering for something sweet or something to make.
