Made this without pounding the chicken, just cut it up in pieces and make the recipe as stated. I have done it several times and plan on continuing to make it!

I just made this tonight. My husband loved it. It's a bit of work to pound the chicken and then fry in batches. I didn't get a lot of liquid left after condensing but I may have let it go too long. It was very good and I will make it again when I don't feel rushed.

What can I use in place of the Marsala wine? Can't have any alcohol.....

On dialysis, can I use cornmeal instead of flour because I can have that & use a jar of mushrooms instead of fresh. On a budget & would love to make this, the nutrients are good too. Thanks
