enchiladas are made with corn tortillas previously fried and soaked with hot sauce (I don't know if can sauce is the most nearly version of mexican sauce for this purpose), they can be filled with chicken, meat or cheese. Once made the enchiladas, fresh or grated cheese are sprinkled over them. They are accompanied with fresh chopped lettuce, tomatoe and sliced onions, and beans (usually fried)

I think there is a big error in the fiber content!! Being a diabetic a lot of times means high blood pressure so am hoping to see more recipes here that are low in sodium. Prefer under 500 mg. But I am so glad to see this new site added!!!

I also have to watch my sodium. Just found Ortega flour tortillas with 40% less sodium at WalMart of all places. I also looked up how to make my own to keep the sodium count down.
